“Shijimi (freshwater clam) ramen” is made with fleshy freshwater-clams gathered in Lake Abashiri-ko and locally grown ingredients. The soup full of umami is lightly flavored and tastes excellent with freshwater clams. You can choose from shio (salt), miso, or shoyu (soy source) flavors. Also recommended is “Nagaimo (Chinese yam) ramen” which makes lavish use of locally grown nagaimo.
